I would prefer to pre-mix my fuel for the Aero 125. Call me old-school or what have you, but premixing in my mind is safer and allows for more optimum performance based on riding conditions and temps. Any suggestions on how to "block-off" or disconnect the oil pump and just start premixing??

You would be wrong about oil injection and premix. The reason oil injection was created was because of premix screw ups ruining engines. I do not know if the 50cc oil plug will work on the higher volume pump in the 125. Also if you are going to premix, you need to increase you main jet on step to make up for the oil being in the gas.
You can't just disconnect the oil lines, the pump will eventually seize form lack of oil. You can pull the pump, grind the teeth off the drive gear and reinstall it, but you have then ruined the pump as the gear is not available separate from the pump assembly.
FYI, Honda oil injection pumps have an outstanding record for reliability.

great information. Thanks. I'll make sure the pump is working fine....it probably is and if so, i'll probably just leave it alone. I had read somewhere that these scooters "drink" oil, but I've not had this one long enough to really know that yet. I just want to make sure I don't burn up the engine!

They drink oil compared to the 50cc engine, mainly because the 125 is 2 1/2 times the size, hence 2 1/2 times the oil consumption. Some people just don't understand simple physics. When I got my first Aero 80 running I thought the oil consumption was high, having only had a Spree for comparison. Again 60% bigger engine meant 60 percent higher oil usage.
